Soak it up. Bomba rice absorbs one-third more water than traditional paella rice, allowing it to soak up and hold an abundance of flavor. Grown in the rich soils of Valencia, Spain, this short-grain rice is perfect for paella, arroz negro and risotto.

The key to a good paella is the socarrat, the caramelized, toasty, crispy crust of the rice that forms on the pan while cooking.
