Perfect for a cozy treat, holiday cookie swaps, and Santa.
Recipe inspired by Pistakio. Makes six large cookies.
Ingredients
- 3/4 cup Pistakio Creamy Pistachio Spread
- 6 tbsp melted butter
- 6 tsp applesauce
- 6 tbsp sugar
- 6 tbsp brown sugar
- 1 1/2 tsp vanilla bean paste
- 6 tbsp cocoa powder
- 1 1/8 cup flour
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chopped dark chocolate

Maldon Sea Salt Flakes to garnish
Directions
1. Preheat oven to 350º
2. Chop dark chocolate of your choice
3. Mix melted butter, applesauce, brown sugar, sugar, and vanilla bean paste until combined
4. Add cocoa powder, flour, salt, and baking soda and mix until completely combined
5. Using a rubber spatula, fold in the chopped dark chocolate

6. Remove the dough from the bowl and roll into a smooth ball
7. Divide into 12 equal balls

8. Use your thumb to create a small well in six of the balls
9. Add 1-2 tbsp of Pistakio Creamy Pistachio Spread to the well

10. Flatten remaining cookie dough balls and use to seal the cookies
11. Bake for 15 minutes and let cool for at least 10 minutes
12. Top with Maldon Sea Salt Flakes and enjoy!
