Matiz España - Saffron
Matiz's saffron (Matiz Azafrán) is cultivated in the La Mancha region in Spain and is famed for its deep red-gold hue, pungent aroma and uniquely floral flavor. Produced for over 350 years by a family company, its honey-like complexity is both savory and sweet. Each stage of gathering and processing the saffron is completed by hand by experts. The raw saffron can only be extracted one month per year in autumn, but the wait is well worth it.
Use in paella, risotto, tagines and more.
• It takes the pistils of 150,000 crocus flowers to make 1 kilo of saffron, all plucked by hand.
• The International Organization for Standardization developed a “Power of Coloration Scale” for determining authentic, high quality saffron. Grade 1 has a UPC (Units of Power of Coloration) above 190. Matiz's regularly scores above 240.
